Pita
Surprise


This is a savory dish that's perfect for brunch or dinner.

Ingredients for 2 Servings:

2 pita bread rounds
fist-sized mound of savory ground sausage
3 eggs
2 large slices mushrooms
2 tblsp. chopped green pepper
2 chopped scallions
2 tblsp. chopped tomato
2 squirts Tabasco sauce
2 squirts Worcestershire sauce
salt & pepper
shredded cheese (a hard cheese grated is best) to taste

Preparation:

Toast, bake or microwave the pita rounds until they are hot. Don't let them get crispy.

Fry up the sausage. Throw in the remaining ingredients, stirring the mix until all ingredients are thoroughly cooked. Best to add the eggs in last, after the other ingredients are cooked, as the eggs will set quickly in the heat. If you choose to use the shredded cheese, go lightly. Too much cheese just makes a gummy mess.

Split the hot pita rounds along the edge, creating a pocket. Be careful, the pocket can be very steamy.

Put half of the mix in the fry pan into one pita round, the other half into the other pita round.

Serve with coffee, juice, and fresh fruit. Pita Surprise is eaten with the hands. It can be runny, however, so keep a napkin nearby.
