Peachy Cream Pie

Here's a pie recipe that's a family favorite of ours!


INGREDIENTS

Single unbaked pie crust
6 fresh, juicy peaches (peeled or not -- your preference)
2/3 cup sugar
4 T. flour
1/4 tsp. salt
1/2 tsp. cinnamon
1 cup heavy cream (or light cream, or Half & Half)

Directions

Wash and slice the peaches into an unbaked pie shell. Mix together the sugar, flour, salt and cinnamon, and pour over the peaches.

Bake at 400 degrees F for 35 minutes. Cool, then refrigerate before serving.

For ultimate decadence, serve with vanilla ice cream!

PIE CRUST

Note: If you don't have a favorite pie crust recipe, here's a simple no-fail one that makes 4 single crusts you can freeze:

1 1/4 cup shortening
3 cup flour
1 egg
6 T. water
1 t. vinegar
1 t. scant salt

Beat egg. Add water, vinegar, salt. Blend with rest of ingredients. Roll into 4 dough balls. The more handling the better!
