Halibut Bake

This is a recipe I got from some nice folks in Old Harbor, Alaska.

Old Harbor is on Kodiak Island, and is one of the oldest towns in the U.S. It has a population of less than 100 - National Geographic actually did a story on Old Harbor. This is an Alaskan Halibut dish from Old Harbor that's very easy to make.

Alaskan Halibut Bake

Mix:
1 cup sour cream
1 cup mayonnaise
1 cup parmesan cheese
2-3 tsp Grey Poupon Dijon Mustard
salt and pepper to taste

Cut 2 lbs of Halibut into 1" cubes. Cover bottom of a 10"X10"X2" deep glass baking dish with a little of the mix. Place Halibut cubes into pan. Pour remaining mix over fish to cover. Cover pan with foil.

Place into oven and bake at 350 degrees for 50 minutes.

Remove from oven and add grated cheese (I use a mix of mild cheddar and mozzarella from Costco) on top, and place back in oven for 10 min until cheese is melted.

Goes well over rice
